Avocado Toast with Goat Cheese and Mint

When it comes to breakfast, it's easy to get in a rut. Frozen waffles, protein bar, or a bowl of cereal. Repeat. And if we're feeling fancy and lucky on time in the morning, a smoothie. Some days it's better than others, rarely great or passable as a "meal," and we always eat it standing up while chasing kids and multi-tasking like the momma bosses that we are. (Or, if you're like Not A Rose Girl, closet-eating so that you can sneak 5 minutes of silence and not having to share with any humans half your size.)

That's where this easy breakfast dish comes in. We wanted to create an elevated version of avocado toast, which let's face it, is already pretty delicious on its own. The creaminess and richness of the goat's milk cheese in this recipe adds a welcome complexity, the mint tastes fresh and the lime bright, leaving a dreamy impression of being on vacation in Miami. Enjoy this for breakfast, lunch, and dinner, why not?

Avocado Toast with Goat Cheese and Mint

2 thick slices of your favorite crusty bread (we used an organic sourdough)
1 ripe avocado
Juice of half a lime
2 teaspoons chopped fresh mint
1/4 cup goat's milk cheese
Olive oil
Sea salt flakes and freshly ground pepper

Lightly toast your bread. Halve, pit, and scoop out your avocado with a spoon. Mash with a fork and mix in the lime juice and mint. Crumble the cheese and fold it gently into the avocado mixture, leaving some small chunks.

Spread the avocado mixture onto your toast and top with sea salt, pepper and a drizzle of olive oil.
